Yellowtail crudo
Yuzu kosho, green mandarin, shiso oil
A dining room shaped by
fire, season, and instinct.

Sumi means charcoal. To us, it means a starting point: the quiet heat that transforms something simple into something worth remembering. Japanese technique, a curious kitchen, and the pleasure of a shared table.
Warm timber. Low light. A seat close enough to see the work of the kitchen. Come with people you love, or arrive alone and sit at the counter.

For our imagined chef, Ren Mori, cooking begins with listening: to the ingredient, to the season, to the people around the table. The menu changes. That way of thinking stays.
Expect the precision of Japanese cooking, the warmth of an open kitchen, and the occasional unexpected turn.
